In 2017 I arranged a social gathering for long-time friends from the usenet group soc.motss, bi-modally located in Thurmont, MD & Gettysburg, PA.

For a festive group dinner we went to the Shamrock Restaurant, in Thurmont, where I had the best dinner of soft-shell crabs I've ever had!

Pasta : I'm using spaghetti #8

Can of whole tomatoes : 2 spoons of paste
Or as I have here tomatoes from the garden

Extra virgin olive oil ... I only use first cold press

An onion gently sautéed

Half a lb. or less of chorizo

Parmigiana or Romano cheese

Black olives

Sauté the onion and chorizo

Make sauce/ put together

Serve over pasta, olives on top and generously sprinkle on the cheese

Enjoy! ...

We're still in #HatchChili season, so here's something tasty from New Mexico for #FoodOnFriday : items like this burrito typically come with choice of green- or red-chili sauce.

But, when you're asked "Red or green?", you can specify "Christmas Style" to get both! So, so good.

This is a large burrito, contained in a rolled, flour tortilla on a light-tan plate with a brown edge. The right side of the burrito is covered in [smooth] dark-red chili sauce; the left side is covered in [chunky] green-chili sauce. This combination is known as "Christmas style".
Some utensils sit at top right on a folded, white-paper napkin. Behind the plate one can see a bit of torso in a green shirt, preparing to attack this tasty dish.

A bag of fresh kale : found in the veggie section
Steam the kale till tender

Sauté 3 cloves of crushed garlic in 3 tablespoons of extra virgin olive oil

Put in kale... salt ... more olive oil

Put in an oven pan
Sprinkle with grated Romano or Parmigiana cheese...
Bake 5 min. on 400 .

Enjoy ... Manga! ...

Our picture is of a tempting plate of homemade caramel tan slices that sits on a dark, glossy plate lined with a white paper napkin.

Four thick, square slices are stacked slightly overlapping in the centre of the plate.

Each slice has a firm, golden-brown biscuit base topped with a generous layer of smooth, rich caramel.

The caramel is a deep amber colour and can be seen between the layers, contrasting beautifully with the pale golden biscuit.

On top is a generous covering of crumbly, golden shortbread-like pieces, creating a wonderfully rough and rustic texture.

The pieces are irregularly cut, giving them a distinctly homemade appearance. The warm golden tones of the caramel and crumb topping stand out against the dark plate and black, polished kitchen worktop.

Soft lighting catches the glossy caramel and highlights the crisp, crumbly texture of the topping.

Overall, the photograph has the inviting appearance of freshly made caramel tan squares. Rich, buttery, crumbly and wonderfully indulgent.

This is close-up of some of the glass fruits shown in the first photo. The glossy finish of the glass is evinced by light reflections in their curved surfaces.

This is a view of the art work of the first photograph showing its situation in the gallery and, noticing that its display pedestal sits on the floor with nearby people, gives some sense of its oversized portrayal of the fruits.
