CROCIN — The Compound of Color.
Crocin is the carotenoid pigment that gives saffron its deep golden-yellow color.
Higher the crocin concentration, the more vibrant the color—and the higher the ISO grade.
What Is Saffron, Really??
Saffron is the dried stigma of Crocus sativus, a flowering plant that blooms for just 2-3 weeks each year. Each flower produces only three tiny red stigmas. That's it. Nothing else.
And the rest, the yellow style & petals—is discarded.
