Everyone files Bottura under reinvention, the chef who deconstructed Emilia-Romagna. But the deconstruction only works because the originals were drilled into him first — by home cooks and tradition-keepers whose names never made the plating. #FoodHistory #Cooking #TheStockpot

The chef with three Michelin stars built his most replicated kitchen out of other people's garbage: Expo 2015 surplus, turned into 10,000 meals for people who'd never see his tasting menu. Cities worldwide copied it.

Tatie Pot, which originates in Cumbria, is similar to Lancashire Hot Pot but includes sliced black pudding alongside the lamb or mutton.

You can find the recipe at piespuddingsandpottages.com/recipe-post/...

Square baking dish with Tatie pot. Bottom right hand corner of the Tatie pot has a spoon and a few of the potatoes have been removed. Wooden surface.

Bottura's signature dessert started as an accident — a lemon tart dropped on its way to the pass. Instead of remaking it, he plated the wreckage on purpose and called it "Oops! I Dropped the Lemon Tart." The mistake became the menu.

Garlic was forbidden in our kitchen in Milan. Its divisive reputation in Italy has quite a history. No garlic this Halloween, then.

I am back from a weekend of cooking a historically inspired feast on the theme of the eighteenth-century Grand Tour, and it was pretty great.

Cheese tartlets based on a recipe in Maria Sophia Schellhammer's wohl-unterwiesene Köchin. The tartlets are arranged on rectanglar white serving platters with a garnish of mache, candied pears, and pickled walnuts. Pumpkin soup based on a recipe in La Varenne's Cuisinier Francois. the photo shows a row of small pottery bowls filled with the soup, each one decorated with a single sage leaf. Roast beef. The beef slices are arranged on rectangular white serving platters, resting on slices of braised fennel and topped with marrow toast. Each platter also contains one small white cup of sauce royale. A course entirely based on Latini's Scalco Moderno: The same white serving platters now hold a serving of breaded, fried chicken pieces, pasta boiled in milk with parmeggiano, and a vegetable puree. They are accompanied by Latini's famous 'Spanish sauce' of cooked, reduced tomato.
Yes, that is chicken nuggets with mac'n'cheese and ketchup. It's an inside joke.

Quince is autumn's great trick: nearly inedible raw, then rose-gold, floral and silky after slow cooking. Even “marmalade” began as quince paste.

Noma's foraging isn't Redzepi's invention. The walk-into-the-woods-and-build-a-dish idea was Michel Bras and Marc Veyrat's work years earlier, in kitchens that got less credit for it. Redzepi scaled it into a brand. #FoodHistory #Noma #Foraging #Cooking #TheStockpot

Noma didn't invent Nordic foraging — it turned what Scandinavian households did out of necessity into a doctrine with a tasting menu attached. Redzepi's real move was making "the landscape" a kitchen discipline, not a garnish.

Noma's edge wasn't foraging — it was a dedicated lab turning fermentation into a measured process. Garum, lacto-ferments, koji: seasonings most kitchens buy, built in-house and controlled like a recipe. The flavor came from the lab bench, not the bottle. #FoodHistory #Cooking #TheStockpot

Those live ants crawling across the raw beef aren't theater. Formic acid is their defense chemistry, and Redzepi puts it to work as a souring agent where most kitchens reach for citrus or vinegar. Seasoning that can walk off the plate. #FoodHistory #NewNordic #Noma #Cooking #TheStockpot

Poaching's whole trick is that the water never boils. You're holding it at a bare shiver—barely moving, no bubbles breaking the surface. Push it hotter to "cook faster" and you've shredded the thing you were trying to coddle. Restraint is the technique. #FoodHistory #Cooking #Poaching #TheStockpot
