This Week's Meals, Dinner Edition: Orange Chicken Parm
Another Mythical Kitchen meal, and this one is a doozy. It takes a lot of time, and a lot of ingredients, but is totally worth the effort. This stuff lives up to the hype. Even if it has no oranges, or parm.

...from the Luby's recipe book, it's a fairly large and substantial, even if it has tomatoes (EW). Does need a touch of salt, despite having olives, Italian dressing and a touch of pesto.

Ingredients
---
1 head romaine lettuce (cut into 1-inch pieces)
1/2 cup ripe black olives (sliced)
1/2 cup green olives (sliced)
1/2 cup white onion (slivered)
1/2 cup red onion (slivered)
1/2 cup mozzarella cheese (shredded)
3 anchovies (rinsed) (drained) (chopped)
1/2 cup prepared Italian dressing
1 tablespoon prepared sweet basil pesto
3 medium tomatoes (cut into 1/2-inch wedges)
2 tablespoons roasted pine nuts

Instructions
---

1 - In a large bowl, toss together romaine lettuce, olives, onions.
cheese and anchovies.
2 - Pour Italian dressing over salad and toss lightly to coat evenly.
3 - To serve, garnish with basil pesto, tomatoes and pine nuts.

Notes
---

Normally makes 6 servings.
Buy lettuce that is crisp and free of bruises and blemishes. Wash it
gently under cool running water to remove any sand and dirt. Dry the lettuce thorouahly; salad dressings won't stick to wet leaves. Store the clean, dry lettuce in plastic bags in the crisper drawer of the refrigerator. Basil pesto may be homemade or found in the fresh pasta sections of many grocery stores

meals, so I took the idea of that diet, with it's portions of protien, starches, fruit, salad and turned it into a meal of protien (well, really, an entree), starches, and salad...then adding a fruit per meal.

...that I was cooking very small amounts of food, and dividing it even smaller. Cooking in such small doses didn't work at all, and I abandonned it after I made, essentially, a few table spoons of mushroom risotto.

That said, I really SHOULD be eating more well rounded...
