The Speyside distillery released a 12yo Spey Brume Dorée — 2nd Edition single malt. 120 hours of long fermentation and matured in 400-litre French oak casks. 56.1% ABV.

Nose with water: More citrusy if possible. Honey malt, Apple juice with apple skin. Vanilla & oak.

Palate with water: A Honey coated charred apple with an oak skewer sitting atop a fire. Smoky

Finish: Spicy with pepper & chilli.

Fumare 14 Year Old

Palate: Sweet & sharp acidic citrus tang, earthy peat & whisps of smoke, honey, syrupy & zesty.
Lemon cream. Suggesting a lemon mouse with lemon peel shavings on top & caramelised sugar which has been charred. Salty & savoury, almost meaty.

Nose: Inviting Sweet peat, Warm lingering smoke with strong citrus. Like a citrus syrup. It’s a summer bbq.

Palate with water: honey, apple & pear. Dry malt & oak, cinnamon & ginger. The peat earthiness has elevated but the smoke has backed off.

Finish: More pepper & ginger, with a more prominent oakiness.

Nose with water: Its opened, floral & woody like a forest with pine, oak and cedar, maple. Turkish delight. Its a black forest gateaux. Water seems to have lifted the nose.

Nose: Darker and a touch closed. Floral, Tart Red Berry compote, rose water, strawberry, Raspberry, clove and ginger. Tree bark, woodshavings or sawdust. Alcohol is more noticable than the Trutina.
