Made some Chinese pork belly. It turned out good. Could have broiled it for a smidge less, you can see a tiny bit of blackening. But it had an incredible crunch. I might do a flavor brine next time. Very succulent, incredible crunch, remarkably juicy and delicious.

Did some cooking last night. Made some braised Shanghai pork belly. Served over rice. It turned out pretty good. I wish the sauce was thicker, stickier. Maybe have it cling to the pork belly more. Add some vegetables, etc.
