Trofie for #pastasunday
I’m trying to manifest an end to summer by savaging the basil for pesto.

Semolina on a countertop, formed into a ring to hold back some warm water. This dough is about 45% hydration (if we’re being careful, which I was not)Blending the water into the semolina with a fork. I do just enough mixing here so it’s not gonna run off the counter, then get after it with my bench scraper until it’s generally uniform.Thoroughly kneaded pasta dough, ready for a quick rest.And at the other end, trofie! These are little spirals of pasta, made by hand, drying on a linen cloth until we’re ready for dinnertime.
