One might imagine thatch
and climbing roses round the door,
all oddly dusted as by a shamal.

The rice-flour crust
is burning bright and golden, crisp and
crazed, and flaking into jungle shadows.

If a conductor
were to flourish this, from oven straight
to podium — oh crumbs!

Unrisen, doubled, warmed,
and waiting to accept the slices of tomato
sliding – watch-like – into hummus..

Strangely light and limp.
but simple as ABC — the best thing since... well
the best thing since this.

Dark and dense,
a long time baking — caraway
to counter Prussian wind.
