Called by many names, Triticum monococcum or Einkorn by science, Šeum in cuneiform, is an ancient species of wheat, existing for over 10k years in cultivation, but used opportunistically back as far as 30k years.  Einkorn, meaning one-seed or little-seed, is named for its singular seed per spikelet, in contrast to modern cultivated species with spikelets holding 2 seeds each.
While overwhelmingly not the most popular wheat in the world, Einkorn wheat endures the harshest environments thru a library of quality “resistance" genes protecting against climate, pests, and disease.  You'll find the species grown in harsh mountainous climbs called ‘siyez’ in Turkey, ‘petit épeautre’ in France, ‘piccolo farro’ in Italy, ‘Einkorn’ in Germany and either ‘Einkorn’ or ‘little spelt’ in America.
