Poaching's whole trick is that the water never boils. You're holding it at a bare shiver—barely moving, no bubbles breaking the surface. Push it hotter to "cook faster" and you've shredded the thing you were trying to coddle. Restraint is the technique. #FoodHistory #Cooking #Poaching #TheStockpot

Potatoes were once widely distrusted in France. Parmentier's famous guarded-field stunt turned suspicion into desire: valuable enough to guard, tempting enough to steal. https://www.worldfoodwine.com/vegetables/potato #FlavorHistorian #FoodHistory #Potato

Chester cake, was apparently invented by Mr Thomas, a confectioner in Chester, who encased a large fruit cake with pastry for the birthday of George IV in 1821.

You can find the recipe at piespuddingsandpottages.com/recipe-post/...

Hungry, hungry hippophagists!?
My grim little article about the time the Victorians tried to make horse-eating fashionable is in this month’s issue of History Today and is free online for seven days. #c19th #foodhistory

Grapenbraden is a Low German unicorn hunt, a beloved dish with no surviving recipe. Hafen braten means the same thing in High German, and there are a few texts. The rest is hope, and a decent onion sauce.

Grapen - a round, three-legged ceramic cooking pot with a long handle. Pots like these, made of ceramic or, more expensively, bronze, were widely used in North Germany. They were stood in the embers to produce a slow, constant heat.

When my grandmother taught me to cook, I had no idea I was following a centuries-old tradition of women cooks whose names history forgot. In this article, I uncover the hidden legacy of women cooks.

Hormel launched Spam in 1937, and after the US entered WWII in 1941 the canned pork became a GI staple: the military received over 150 million pounds by war's end. It stayed on the menu in Hawaii, Guam, Okinawa, the Philippines and Korea. #FoodHistory

Court bouillon isn't a stock you build to flavor the fish. The acid and salt firm the flesh and keep it from falling apart; the aromatics are almost secondary. Escoffier codified a technique cooks had been running for generations before it got his name.

Peasant foods like polenta, oats, potatoes, or offal weren’t trendy.
Today? Polenta is served with black truffles & bone marrow is served on tiny pieces of toast.
So how did humble foods become expensive cuisine?
