Nana has Baked Beans on the menu for lunch today but she started them last night. Soaking overnight rehydrates the dried beans, giving a creamy texture in the end. If I was looking for a reason to buy some salt pork, this might be it. 🍽️ 🍜 #FoodSky #Cooking #Recipes #RecipeOfTheDay

From 1943, The Modern Family Cookbook by Meta Givens OLD-FASHIONED BAKED BEANS 2 Ibs. dried navy beans ¼ cup brown sugar 1 teaspoon soda ½ cup molasses 1 medium onion, sliced ¼ cup tomato catsup 1 tablespoon salt 1/16 teaspoon black pepper 4 teaspoons cider vinegar ¾ Ib. salt pork, sliced 1 teaspoon prepared mustard Wash beans thoroughly, cover with cold water, and soak overnight. Drain. Cover with fresh cold water, add soda, and bring to boil. Drain, rinse, again cover with cold water, and bring to boil. Put the onion in bottom of bean pot or deep casserole with all the rest of the season-ings. Add the hot beans, and barely cover with boiling water. Lay strips of salt pork over top, cover, and bake in a very slow oven (250° F.)

From 1965, The Fannie Farmer Cokbook New England Clam Chowder Old-fashioned cooks discarded the pork scraps, but they add a savory touch to the chowder. Put in a deep pan 1½-inch cube salt pork, diced fine Cook slowly until the fat melts and the scraps are crisp and brown. Remove the pork scraps and set aside so they will be crisp when they are added. Add to the fat 1 onion, chopped fine Cook slowly until the onion is golden. Put into the pan in layers 3 cups cubed potatoes 1 quart shucked chowder clams Sprinkle each layer with Flour, salt and pepper Add 2½ cups boiling water Simmer until the potatoes are tender (about 20 minutes). Add 4 cups hot milk 4 tablespoons butter Salt and pepper to taste ***continued in next photo***Sprinkle pork scraps on each bowl of chowder. Serves 8 generously.
