If you want a nice gooey grilled cheese, American or some kind of emulsified cheddar. That way you get a proper melt on the cheese.

I talked about grilled cheese tonight with @toygalaxy and @kate_in_chat on the Secret Galaxy Unannoucned Livestream, so I decided that’s what was for dinner. We talked about butter vs mayo, and I wanted to try… both. On sourdough. Pretty good, but I prefer just butter.

Are we in El Cajon or Missouri?? It looked good, it sounded good. The vibe inside was pumping with that classic musica norteña. The burrito was… well listen. It’s the one of the best I’ve had outside of SoCal. But still doesn’t hold up to even the worst I’ve had there. But it did scratch the itch.
