Every #GF #bread recipe says something like, "Bake for XX to YY minutes (uncovered) or until the internal temperature reaches 205℉"

The instant-read thermometer read 213℉. Deflation happened right after removing the probe.

There were other problems.

The image shows a loaf of gluten-free teff and brown rice flour bread sitting on a cooling rack on a kitchen counter. The center of the bread loaf is sunken quite badly, very deflated, and not at all how bread should be. But it smelled really, really good. The loaf had a nutty, rich smell that implied that when I finally get this figured out, it's gonna to taste amazing!
