Wild grain in the epi palaeolithic Near East was tiny, maybe the size of grape pips Also very hard and tough. Not easy to grind into flour. Much easier to steep, dry in the sun and crush with a stone. #malt
@merryn02.bsky.socialIt's not complicated to make malt and malt sugars from grain. Natufians were experimenting with wild foods, tiny grains, lentils and more. They were steeping, crushing, grinding. They discovered that germinated grain was friable, easier to crush and when heated with water it makes malt sugars. #malt
