This Heritage Grade Uji Matcha begins with tencha tea leaves carefully refined by Nishide-san in Uji, one of Japan’s most historically significant and respected tea-producing regions. The tea plants are shaded under modern canopy shading for approximately 40 days, depending on the growing year. This extended shading encourages the rich savory umami, sweetness, vivid color, and complexity sought in exceptional Japanese matcha.

After refinement, the tencha is taken to Nishide-san’s partner matcha mill, where the leaves are slowly stone-ground into an exceptionally fine powder.
