A traditional Dutch food truck ("oliebollenkraam") illuminated with warm festival lights at dusk. The top facade features colourful illustrations of a woman in traditional attire, a chef, and signs for Dutch pastries like "Verse Oliebollen" and "Appelbeignets". People gather in front on a wet brick plaza that reflects the neon lights. New Year's Eve : Eating oliebollen on December 31st is an essential tradition in the Netherlands. Families often bake them at home or buy them in large quantities to share with guests as they count down to midnight. Oliebollenkramen: Starting in autumn (around October), seasonal food trucks called oliebollenkramen appear on street corners, market squares, and near shopping centers across the country. They sell fresh, warm oliebollen alongside other treats like appelbeignets (apple fritters) and berlinerbollen. Varieties: The classic oliebol is plain, but the most popular version contains raisins, currants, and sometimes chopped apples or candied peel (krentenbol or oliebol met krenten). Ancient Pagan Roots: The origins of the snack date back centuries. One popular legend connects them to the Germanic goddess Perchta. It was believed that during the winter nights, evil spirits would fly through the sky. Eating greasy foods like fried dough ensured that Perchta's sword would slide off anyone who tried to cut open their stomach.

Last of the local 'neon' neon; including one hinting at one culture shift that it took me a while to adjust to. That east coast agrarian early rising ... which means an evening out winds down by 9pm where in the UK, we would just be getting started
