He contrasted wealthy Victorians searching for exciting new foods with poor agricultural laborers surviving on extremely monotonous diets.
He believed insects could provide inexpensive additional food for working-class families.
He particularly favored vegetable-feeding species, which he regarded as clean and wholesome.
Agricultural pests were especially attractive to him because eating them could accomplish two things at once: provide additional food and reduce the insects destroying crops.
He even pointed to people who ate cheese containing cheese mites and dismissed the mites because they were "only cheese."
By the same reasoning, Holt joked, caterpillars that lived entirely upon cabbage could be considered "only cabbage."
Victorians already ate oysters, lobsters, shrimp, snails, and other creatures that could appear equally strange if people hadn't been accustomed to thinking of them as food.
He argued that there was nothing inherently disgusting about eating an insect.
He seriously believed that Britain's prejudice against eating insects was irrational and that properly prepared insects could become fashionable delicacies.
His book began by confronting what he considered the biggest obstacle: disgust.
Did you know?
In the Victorian era, an author tried to convince people that insects belonged at elegant dinner parties, complete with multi-course menus featuring beetle larvae, moths, and grasshoppers?
Vincent M. Holt published a small book titled Why Not Eat Insects?
Brompton Cemetery, c.1850's.
Sherlock Holmes was shot here,
I felt it.

Once free, Millie and Christine continued performing, but their situation was fundamentally different.
They were no longer enslaved property who could legally be bought and sold. Their career expanded into an extraordinary international success.
They became known as the “Two-Headed Nightingale.”
The end of slavery did not end attempts by other people to control them.
A complicated dispute developed over custody of the sisters and control of their lucrative performing career.
The man who controlled them before emancipation, Joseph Pearson Smith, recognized that they could become much more successful performers if they were educated.
They received instruction in reading, writing, music, and other subjects and developed considerable musical ability.
The sisters were sold while still very young and passed through the hands of various owners and showmen.
They were exhibited before paying audiences and were even kidnapped amid disputes over who possessed the right to display them.
